The Best Grain-Free Cookies

Trust me, you are going to want to try this recipe out!


We have probably made this recipe at least ten times already and im not even exaggerating that. these have easily become our fave. one thing I will mention is that this recipe does require a lot of almond flour but you may be able to get away with using oat flour.. not a hundred percent sure, but let me know if you try that! anyways, extremely worth the long list!


Ingredients:


1/3 cup pumpkin puree

1/4 cup organic coconut sugar (can use regular)

1/4 cup melted coconut oil or olive oil

1 tbsp maple syrup

1 egg, whisked

1 tsp vanilla extract or 1/2 tsp giddy yoyo vanilla bean powder

1 1/2 cups packed almond flour

3 tbsp coconut flour

1/4 tsp aluminum free baking soda

1 1/2 tsp ceiling cinnamon

1 tsp nutmeg

pinch of salt


chocolate chips of your choice - I used @lilys_sweets dark choco


Method:

-preheat the oven to 350.

-whisk the egg and then add all wet ingredients into a large bowl and mix lightly. add the rest of the ingredients in and mix until a nice, thick consistency forms.

-roll the dough into little balls and place on parchment paper.

-bake for 15 mins!
