the recipe is completely vegan unless you're using Cadbury mini eggs (like I did). I tried this recipe out without following anything and I'm pleasantly surprised with how well it turned out. boyfriend approved!!
1 cup almonds
2 tbsp @giddyyoyo raw cacao
1 tbsp coconut oil
1/3 tsp @giddyyoyo mountain salt
1 1/2 cup soaked cashews
1 1/3 cup @chasorganics coconut CREAM
1/3 cup maple syrup
1-2 tbsp squeezed lemon (to your personal preference)
3/4 cup mini eggs
1.soak dates in hot water for a few minutes. add all bottom layer ingredients into a processor and pulse until it becomes a sticky consistency.
2.place into the bottom of a glass dish or pan (I used a loaf pan). make sure to line the pan with parchment paper. place in freezer for 30 minutes.
3.drain soaked cashews. place all ingredients into the blender and blend on medium speed using a @vitamixca
4. add in the mini eggs and place the filling on top of the bottom layer. freeze for at least one hour.
5. let it freezer for a few hours until it becomes perfect to eat! I hope you enjoy this recipe as much as I did!
ps- I'm still cleansing but wanted to make this recipe because I get so much joy from creating recipes for others. but I had a piece of this and it was SOO goooood but my head has been killing all day- just goes to show how sensitive we really are to sugar!
