I am so stoked to be sharing this low sugar recipe! We have made this recipe three times already and it’s gone within 3 days!!
I used maple syrup and Organic Traditions Organic Yacon syrup in the recipe to help sweeten it, but if you wanted to just use a natural low sugar alternative, I would recommend just trying the Yacon syrup! It has a light amber colour to it with naturally sweet and floral like flavour. It’s truly one of the best natural alternatives I have ever tried. It’s organic and pure. Just one ingredient!
Ingredients:
2 cups gluten free oats
1 1/4 cup almond butter
1/4 cup maple syrup
1 1/2 tsp Organic Traditions Yacon Syrup
Your favourite chocolate bar (2 bars would be best- I recommend Giddy Yo!)
Method:
1.Add in 1 cup of almond butter, 1/4 cup maple syrup, and 1/2 teaspoon of yacon syrup in a pot. Heat on low until the consistency is thick. Slowly add in the oats, 1/4 cup at a time.
2.In a rectangular or square dish, add in the oat mixture and press down. I personally used parchment paper so it would be easy to remove from the tin once it was done.
3.In a double boiler, add in your favourite chocolate bar and allow it to melt. Once its almost melted add in 1/4 cup of almond butter, and 1 teaspoon of the yacon syrup.
4.Stir the mixture and be cautious so it does not overcook.
5.Add the chocolate onto the oat layer and let it freeze for about 30 minutes before serving.
