Chia Seed Pudding

I am a huge fan of quick, simple breakfasts! I am usually on the go, right in the mornings after my fast workout, so having breakfast ready for me is super important.  My absolute favourite ready-to-go breakfast is chia seed pudding. When done right, this breakfast can keep me feeling satiated for hours and full of energy.  Chia seeds are an incredible source of essential fatty acids, fibre and protein. This is why they really help to keep our blood sugar levels balanced. When soaked overnight, the chia seeds become more bioavailable to the body so that we can digest it better, and obtain those important nutrients.  Here's how to make it:  Ingredients:  - 3 tbsp chia seeds - 1 cup nut milk (almonds, cashew, coconut) - 1 tsp cinnamon  Method:  1. In a glass jar, add in all ingredients. Shake vigorously and place in the fridge overnight.  2. That's literally it!  In the morning when you take it out, add in some of your favourite nutrient dense superfoods so that it can be a complete breakfast.  Some of my favourites include: Almond butter. peanut butter, hemp hearts, flax, granola, berries, banana, apple, pumpkin seeds, sunflower seed, almonds, hazelnuts, nutmeg.  Get creative!
